PROTEIN POWER PANCAKES

These light and fluffy banana protein pancakes are refined sugar free, gluten free and low carb and make for a quick and healthy breakfast or post workout snack. Research shows that people who include protein at breakfast have better appetite control throughout the day, a win for the protein pancake! For an even bigger protein punch (and glow-y skin!) add a scoop of collagen powder.

(Serves 2)

Prep time: 10 minutes
Cook time: 10 minutes

INGREDIENTS

125g cottage cheese
4 medium eggs
1 scoop of collagen powder or vanilla protein powder (I love Planet Paleo Collagen Powder)
1-2 small ripe bananas
1 tsp vanilla
35g (¼ cup) coconut flour
½ tsp baking soda
pinch of sea salt

TOPPING

1 mango, peeled and sliced or seasonal berries
200g Greek or coconut yoghurt
1tbsp desiccated coconut plus extra for sprinkling

Lime zest

DIRECTIONS

1. Place the cottage cheese, eggs, bananas and vanilla in a high-powered blender (I used my nutriBullet) and blend until smooth and creamy.

2. Add the coconut flour, collagen powder (if using), baking soda and salt and blend again until combined. Leave to sit for 5 minutes to thicken while you heat a non-stick frying pan over a medium heat.

3. For the topping, place the yoghurt, desiccated coconut and lime zest in a small bowl and mix until well combined.

4. Add a little coconut oil to coat the surface of your heated pan. Pour the batter straight from your blender/NutriBullet into the pan. Cook for 2-3 minutes or until bubbles rise to the surface and the underside is golden brown. Flip and cook for a further 1-2 minutes or until golden brown and cooked through. Transfer to a plate and keep warm in the oven.

5. Repeat with the remaining batter until finished.

6. To serve, divide the pancakes over two serving plates and top with the mango or berries and coconut yoghurt. Sprinkle with extra desiccated coconut and enjoy!
