CANDIED GARLIC ALMONDS

It sounds nuts, but they’re tasty nuts!

This combination may sound odd, but these garlic-y, candied almonds are insanely good. Activating nuts is easy to do and gets rid of phytic acid, an anti-nutrient that irritates the gut lining and prevents absorption of certain minerals. Almonds are high in vitamin E, magnesium, biotin, fibre and monounsaturated fats and so this makes a super nutritious snack.

(Makes about 1-1/2 cups)

Prep time: 8 hrs to soak nuts plus 5 minutes
Cooking time: 15-20 minutes

INGREDIENTS

4 cloves garlic, finely minced or grated with a microplane

3 tablespoons coconut sugar

1 teaspoon Maldon sea salt or chilli salt

A good grind of pepper

1 cup activated almonds – (soaked in water for 8hrs or overnight)

DIRECTIONS

1. Preheat the oven to 175C.

2. Drain and rinse the almonds.

3. In a medium bowl, combine the garlic, coconut sugar, salt and pepper. Whisk together, then stir in the almonds, making sure they’re fully coated with the mixture.

4. Lift the almonds out of the bowl, leaving behind any excess liquid and spread evenly on a parchment-lined baking sheet. Bake in the oven for 15-20 minutes. Keep an eye on them so they don’t burn. Remove from the oven toss in the caramel while still hot then let cool for 5-10 minutes before eating.

Keep leftovers, if you have any, in an airtight glass jar.
